Dim'er Devil/Egg Devil


Dim'er Devil

A very very popular Kolkata Street food.It is delicious,filling,popular evening snack.Bengalis love this and this dish is a delicacy of Bengal.Few people make with half egg,few with 1/4th egg but the coating is made with potatoes.These are deep fried and available in every food stall.Popular street among all.Main ingredient is egg.It is served with tangy sauce and salad at the side.You can prepare this before hand and serve this hot.During winters and monsoons it is loved the most by people.


Ingredients   

  1. Boiled Potatoes-4
  2. Boiled Eggs-4 Cut into 1/2 
  3. Chopped coriander-1/2 bunch
  4. Roasted spice Mix-2 tbsp (whole Garam masala,Jeera,Dhania,Panch phoron,Bayleaves,Dry red chillies)
  5. Salt to taste
  6. Grated Ginger- 1tp
  7. Chopped green chillies-4
  8. white oil for cooking and deep frying

Method

  • First boil the potatoes,cool it,peel the skin and the mash it well .

  • Next add chopped coriander,roasted spice mix,salt to taste and mix it well.

  • Now take a pan and add 1 tp white oil,heat and add grated ginger and green chilles and saute it for a 1/2 min.

  • Now add mashed potatoes which was already seasoned before.Now saute this for few min so that it binds well and become more aromatic.This is my style of making this Devil.Then take it out in a plate and cool it nicely or else you cannot make the devil properly.This is a very impt step.

  • Now cut the boiled eggs into half.

  • In a bowl,break 2 eggs.Add salt,little pepper powder,little milk and whisk it nicely.

  • Make 8 balls for 8 half eggs.Make a whole in the centre of the potato mixture and place half egg and cover it nicely.Repeat it for all eggs.

  • Now first coat each eggs with breadcrumbs,then dip in the egg mixture and agin roll it with bread crumbs and keep.Repeat the process for all.Now keep it in the fridge for 30 min to bind well.You can always prepare it in advance and keep.

  • Now take it out from the fridge,keep it for 10 min and then deep fry till golden brown.

  • Serve it with salads and tangy sauce.

Dim Aloo posto curry(Egg curry with poppy seeds)


Posto or poppy seeds is very popular in Bengal.It is a must ingredient in our kitchen.Poppy seed paste gives a nice texture and taste to any dish.Combination of poppy seeds with mustard and green chillies are like match in any recipes.I will show you a different version of Egg curry.It tastes little different.So try this recipe.

Ingredients


  1. Boiled egg-6.Cut into half.
  2. Boiled potatoes-8 to 10
  3. Onion paste-2 big onion
  4. Ginger paste-1 tp
  5. Tomato paste-1 big
  6. Green chillies
  7. Turmeric powder- 1 tp
  8. Red chilli-1 tp
  9. Garam masala-1/2tp
  10. Poppy seed paste-2tpsp
  11. Flour-to make a thick batter
  12. Mustard oil-2 tbsp for frying the potatoes and eggs and cooking
  13. Salt and sugar to taste

 Method


  • 1 Make a thick batter with flour,pinch of turmeric and salt.Cut the boiled eggs into half and dip one by one in the batter and fry in mustard oil on both sides and keep aside.
  • 2 In the same oil fry the boiled potatoes until golden and keep aside.
  • 3 Now in the oil add onion paste and ginger paste and saute till it changes its colour and leaves oil.
  • 4 Now add turmeric powder,red chilli powder,garam masala powder,salt and pinch of sugar and saute it for few min with very little water till it leaves oil.
  • 5 Now add poppy seed paste and saute it for couple of mins.
  • 6 Now add the fried potatoes and fry for few min so that it is coated well with the paste.
  • 7 Now add enough water to cook the spices with the potatoes and the curry is semi thick.
  • 8.Carefully place the eggs in between and add slit green chillies .After 2 min switch off the flame and serve hot with rice,rotis,parathas.

Cooking and prep time-45 min
Serves 4 to 6 people

Half Mughlai Paratha


Half Mughlai Paratha

This name my mom gave as she and dad made mughlai parathas during weekends.It was a little elaborate cooking.You need a big tawa for that.On weekedays we demanded her to make mughlai parathas and mom came out with other option which was quick and easy.Good evening snack or morning, breakfast on weekends.My kids love it.Serve it hot with salads.

Ingredients


  1. Flour-4 cups
  2. White oil-2 spoons
  3. Salt to taste
  4. Water
  5. Eggs-2 beaten
  6. Sliced onions-1 big
  7. Chopped green chillies-3(optional)
  8. White oil/Vanaspati for frying
  9. Salads and Sauce for garnish

Method


  • Make a semi soft dough with oil ,flour,salt. and water
  • Take a small portion of the dough and roll like a paratha.
  • Now beat an egg with salt and keep aside.
  • Slice onion and chop green chillies.
  • Take spoonfull of egg mix and spread on the paratha.Then spread chopped green chillies and sliced onions.Now take one side of the paratha and seal on the otherside like semicircle.
  • Now put 2 spoons of oil and fry on both sides.


Serve with salads and sauce.Serve hot.

Cheesy Mushroom Pancakes




Cheesy Mushroom Pancakes

Simple breakfast or evening snack recipe which is healthy for all and easy to make too.Cheese makes it creamy and more delicious but you can omit it too.

Ingredients 

  1. Eggs-2
  2. Flour-3 tbsp
  3. Milk/water-as per need
  4. Onion-1 chopped
  5. Mushrooms choopped-1cup
  6. Capsicum-1/2 chopped
  7. Cheese shredded-1 cup
  8. Pepper powder-1 tp
  9. Salt to taste
  10. Olive oil or Butter-To Fry the pancakes




  • First whisk 2 eggs in a bowl and add flour 3 spoons,salt,pepper,milk or water and whisk it nicely to make it fluffy.

  • Heat a pan and put little olive oil and once it is hot add the egg mixture and lower the flame.Add shredded cheese,shredded mushrooms,chopped onions ,chopped capsicum and cover and cook in low flame till it is cooked (all in little quanties)

  • Serve it hot and fresh.
  • Garnish with sauce.
